Bandera's mashed potatoes
Since Bandera (Barrington and Wilshire) just added pick-up service, I have been reminded of their amazing mashed potatoes. For a restaurant that is otherwise fairly meh for me, those mashed potatoes are worth every penny!
I am wondering if anyone has a recipe--I know that there is cabbage, butter, leeks(?), parsley...but what else?! I'd love to be able to serve them at home without the road trip. Any suggestions are invited--
I'm pretty sure they serve a version of Colcannon (an Irish mashed potato dish with either cabbage or kale and scallions). I have a recipe you can try from Martha Rose Shulman. It's good but you probably should increase the butter and maybe use regular (not low-fat) milk to make it more like the restaurant recipe.
