I need ideas on what to do with about 3/4lb., slightly overcooked pork tenderloin. Help! Thanks.

mince and add to egg roll or dumpling filling.

I would shred it up and mix it with bbq sauce and maybe onions and peppers (cooked) to stretch it for pulled pork sammies. Or just freeze it, mark it well and use it anytime later in fresh summer rolls, topping for nachos or homeade tacos. If you add beans and sauteed veggies it will really stretch

Chop and cover with bbq sauce

Make a plate of ramen noodles and vegetables, slice the pork VERY thin and steam it for only a few minutes with a little bit of sesame oil in the water, top the noodles with the pork and serve with a soy/garlic/ginger sauce and a few chopped scallions on top.
