recipe for raspberry millet muffins from The Cottage in LaJolla
Does anyone have the recipe for these awesome muffins? I never get out there any more and am really craving them. Thanks!
If you're up for experimentation, there is a recipe for quinoa muffins in Vegetarian Cooking for Everyone by Deborah Madison. It calls for both cooked quinoa and quinoa flour, so you cold sub cooked millet and millet flour, which is available from Bob's Red Mill. I've made the quinoa muffins and millet bread before, and both are delicious, so I think Madison's recipe would be a good jumping off point. Your local library probably has a copy of the cookbook. I haven't seen ANY of The Cottage's recipes online but they do have a cookbook published in 2008. I'm sorry I don't have a copy to see if the muffin recipe is in that book. You might try interlibrary loan if any of the libraries in your region have a copy to borrow.
