If you're interested in other kinds of fat, the ones at Church & State are fried in pork fat.

I have to say, I waited 2.5 hours at Hot Doug's in Chicago to try their duck fat fries and they tasted just like...fries.

IIRC, RH at Andaz serves triple fried in duck fat fries . Though the one time I had it, it wasn't very good or special.
