ISO - Spicy Kosher Sausage

We've got some kosher relatives coming to town and my wife made the mistake of telling them I'd make some gumbo. I'm used to using pork Louisiana hot links, but that obviously won't do. Does anyone know anywhere to get some spicy kosher chicken or beef sausage?

If they are really Kosher, they are not going to eat anything that has been cooked in a kitchen that has prepared pork or shellfish, or use any utensils or plates that have touched both milk and meat. Now, if they are only sort-of Kosher (like me), you would be OK.

how are you going to handle the shellfish issue?

There is chicken gumbo which doesn't have shellfish in it. In fact we always liked the chicken gumbo at Orleans (RIP) in Mar Vista better than their seafood gumbo.

Yes, this will be chicken gumbo. Otherwise I'll have to pay off a Rabbi tocerrtify my home-grown, top-feeding shrimp as Kosher.

i second the suggestion for Jeff's. The Neshama are ok but jeff's are better.
