Good things in life aren't necessarily easy, and neither is RVC. It's not hard but it's also easy to mess up.
If you really want to cut corners, Duncan Hines makes RVC cake mix.
It's not bad at all, and when I used it once, I substituted buttermilk for the water in the recipe. It made the cake denser than the water would have and much closer to Mama's recipe that I've used for 40+ years. This is not at all a bad mix. As mixes go.
But please, take the time to make the real icing for RVC. Not cream cheese frosting. Ick.
The white-sauce-based icing makes a big difference. Not hard except that you have to beat it for a long time.
Use the time you saved by using the mix to do the icing right.
