Home made non alcoholic Egg Nog
Here's the one that was on my philosophy shower gel! I kept meaning to try it but never got around to it; if you do, let us know how it goes.
3/4 cup sugar
3/4 tsp salt
1 tbsp run flavored extract
1 tsp vanilla extract
2 quarts milk (just under 2L)
1 1/2 cup heavy cream
1 tsp ground nutmeg
1. Beat eggs at high speed until thick and foamy; gradually beat in sugar and salt, then rum and vanilla extracts. Slowly mix in the milk.
2. Cover and chill until ready to serve.
3. Just before serving, whip cream until soft peaks form, fold into eggnog. Pour into punch bowl and garnish with nutmeg.
There is no reason that you can't leave out the liquor. Increase the vanilla if you don't object to that small bit of alcohol. My mother used to make eggnog for me as a child by just mixing an egg into a tall glass of milk. You can add sugar or vanilla but the key is fresh nutmeg grated over the top.
