Croquenbush - Where to find one??

My wife and I got married about 13 years ago at Le Jardin in Soho and one of the best things about the whole affair was the Croquenbush we had instead of a wedding cake. Now my young cousin, who was about 15 at the time, still remembers (as many do) how terrific it was. He's getting married in the fall and ants to do the C'bush thing to cap off his nuptials.

I haven't been back for a while, but Le Jardin was a great place for a wedding, esp in October, when the garden is still warm and the grapes are ripening. This was when Girard was the owner. He was a trip, but he could cook! I've heard it's gone downhill progressively since he left.

He's getting married in Brooklyn, so this may be more of a bakery thing. Help and thanks!

A croquembouche can be a delectable treat of great beauty. It's something that I've seen served far too infrequently. Good luck!

    1. Found this rec. specifically mentioning croquenbush in a recent New York Magazine:

      1. I remember Balthazar (their bakery outpost) makes croquembouche. I'd suggest you call them since they tend to make it during Christmastime.
