The sausages are definitely the way to go. We had the boudin Basque and the merguez, both of which were excellent.

I think you would be better off doing a bunch of small dishes rather than getting the mains. The homemade sausages are good, I really liked the Tuniesiene and the black pudding. The scotch egg was also very nice as was the bone marrow and the octopus. The lamb's tongue was just alright and the chopped salad with lobster was overpriced and under seasoned.
The beer list is spectacular, make sure to take advantage of that and ask for pairing recs if you are not well versed in beer pairing.
