need vegetable side dish ideas for valentines day dinner

i am planning a valentine's day dinner for two and need some vegetable side dish ideas! we will be serving prime rib and roasted potatoes. i am looking for ideas featuring non-starchy veggies only, preferably something simple and not too heavy.

      I love this recipe for string beans with shallots. And you can even make it ahead of time (make string beans and sauce separately and then combine and heat before serving).

        roasted beets with goat cheese or blue cheese and hazelnuts or walnuts or pecans; any sauteed greens like broccoli rabe or spinach (just do a quick saute with olive oil and garlic and crushed dried chile flakes).

          Fresh spinach sauteed in garlic oil or steamed broccoli with lemon butter and a good grind of black pepper; both are simple & good

            I think of creamed spinach with steak but if that's too heavy, what about simple roasted garlic brussel sprouts?

              i was gonna suggest caramelized roasted brussel sprouts as well.

              i also thought of grilled asparagus and grilled or baked tomatoes.

              I think that Christmas Chard (the one with the vibrant green stems) would be lovely for Valentine's Day. I just saute it with olive oil, garlic and a little bit of shallot.
