Help- I need an easy natural mushroom gravy to use over veal- mushroom loaf

I was able to buy a high level prepared sauce from a local catering store but that option is no longer available. I have tried the expensive frozen veal stocks and find them too salty. Does anyone know a shortcut recipe using mushrooms, stock, and perhaps wine?

  1. saute some sliced shrooms in a few tbs. butter. Let them brown nicely, then add 2 more tbs butter and 2 tbs. flour. Let flour cook 1 min. while stirring like crazy. Add a little red wine to pan and whisk like mad while slowly adding veal stock or 1/2 chix 1/2 beef stock- 1 cup. Keep whisking till gravy boils and starts to thicken. I like to add thyme to the shrooms and sometimes sub sherry for the red wine. If you have "kitchen bouquet" a little of that stuff does wonders for gravies and brown sauces. adam

    1. I use veg or canola oil; 1/4 cup & 1/4 cup flour..whisk together in a skillet over medium low heat until it begins to brown (golden brown) then add the mushrooms and cook a couple of minutes. Add vegetable or beef could use store bought low sodium, bring to a simmer and add wine if you want. Season with salt & pepper.

      Another thing you can do is add your mushrooms to a saucepan with the stock, bring to a simmer..make a slurry with cornstarch and add to the pot. Add any wine & seasonings and continue to simmer for a few minutes. This one is more natural; no flour, oil or butter
