Homemade Pizza Sauce

Hi all! I'm going to give home pizza making a try. Would anyone have a tasty pizza sauce? The jarred stuff just doesn't cut it. Many thanks!

  1. I use a recipe from Diane Morgan & Tony Gemignani's Pizza cookbook. The recipe makes about 3 1/2 cups, enough for 4 large pizzas. (I usually make a 1/4 batch for a single large pizza, 14-16"):

    Tony's Pizza Sauce

    4 - 6 oz cans tomato paste
    3/4 cup water
    1 1/2 Tbs extra virgin olive oil
    2 Tbs sugar
    1 1/2 Tbs table salt (or 2 1/2 Tbs kosher salt)
    4 tsp dried oregano
    1 tsp dried basil
    1/4 tsp garlic powder
    4 large fresh basil leaves, finely chopped

    In large bowl, using wire whisk, combine tomato paste, water, and olive oil. Add sugar, salt, oregano, dried basil, and garlic powder; whisk until well combined. Stir in fresh basil.
    Use immediately or store in tightly covered container in the refrigerator for up to 5 days or in freezer for up to 2 months. Bring to room temperature before using.

      1. I take a can of puree and a can of crushed and let it drain for an hour or two to thicken it up (not a bad idea to catch the juice for later use).
