Potato Dessert Ideas?

I'm trying to come up with a dessert that uses potatoes (not sweet potatoes). I found a cake recipe that uses mashed potatoes in the batter but am looking for something where the potato is the starring ingredient. Does anyone know of a good recipe or have any ideas?

Potato crepes filled with fruit and a creme fraiche. Pair with a Bordeaux, Pinot Noir, Beaujolais, Liebfraumilch or Riesling. I'd choose Liebfraumilch.
