One other thought -- if your mother-in-law is more adventurous, Hoban for Korean or Classic Sai Gon for Vietnamese are both good (both are in the area of Jensen's).
Jensen's would work. Pardon My French also offers dinner. I Nonni may be a bit far, but is easily the best restaurant within 5 miles of Eagan. Bibo is another option, but I've heard mixed reviews and haven't been there myself.
