Smoked Gouda and Veggie Quesadillas

About 6 years ago when my wife and I started dating, she was a big fan of the smoked gouda and veggie quesadillas at the Cheesecake Factory. I knew several of the main ingredients, and made something similar for her at home. But, it's been such a long time since we even thought about these, I don't remember much about them other than how much she liked them. They had smoked gouda cheese, and maybe mushrooms and some other veggie, like zucchini??? I've been searching the web for knock offs or even a description of the dish where I could figure out the ingredients. They don't seem to have it on the menu anymore either.

Are thereany Chowhounds out there with a better memory than me? I'd love to make these for her again.

If not.....I'll take suggestions for other interesting quesadillas. We do basic bean and cheese ones a lot for a quick meal. Sometimes I'll also do BBQ chicken and cheddar, or Buffalo chicken and blue cheese.

  1. It's my understanding that the quesadilla that's on the menu now contains green onions, chiles & cheese. I don't have a recipe but don't see why you couldn't just grill, pan cook or even roast whatever kind of veggies you like and season with some oregano, ground cumin, salt & pepper...maybe some ancho or chipotle chili powder for some heat then make your quesadillas & pile on the smoked gouda (which by the way, I'm using tonight for an awesome mac & cheese) before toasting to a golden brown...

      I thought it would be cool to make it the way she used to get it. Our best memories together are usually tied to a great meal that we had together, or something else food related. I may have to monkey around a few times to see if I can create something similar.

      I did find this one for Carmelized onions with Smoked Gouda on Epicurious. I think I'd top it with a BBQ sauce to dip. Regardless what I can dig up, I'm anxious to try this one.

      You could also use this recipe for Smoked Gouda and Caramelized Onion Quesadillas as a base and just substitute whatever veggies you like for the prosciutto.

      Maybe this will help; I found a description of the Cheesecake Factory quesadillas you remember. They are no longer on the menu.

        I knew if I turned to Chowhound someone could help me.....YES! That's it. It really is pretty good if you'd like to try it. I'll make it for my wife ASAP. She'll definately appreciate this. Thanks so much.

        We like making quesadillas about once a week because they are fast and you can be creative. We have small kids, so we need fast dinners. I'll probably try those other ones too, so thanks for sharing.

          Yep, that's it alright...To the OP, most quesadillas use the same seaonings I posted...I think it's romantic & sweet the way you want to recreate a special meal...good luck!
