      <content>ptcha - isn't headcheese. If you want headcheese (kocsonya is just an aspic,) you can go to the German Deli on Roscoe west of the San Diego fwy, and they have a big selection, including hungarian style (disznosajt - pork cheese).

As for p'tcha, it is jellied calf's foot - the calves' hooves are boiled in a seasoned broth, when cooked the meat is flaked off, the liquid strained and boiled down and the natural gelatin sets. Lots of garlic (Hebrew, regel krusha), a kosher headcheese if you like. There used to be a Jewish deli on Fairfax around where Merkato is now, between Olympic and Pico, that sold it. Maybe someone else knows where to get it. I get homemade p'tcha sometimes. 
If you're ever in New York, the 2nd avenue deli sold it the last time I was there, in 2002.
