Cape Coral FL to NJ Shore...where should I eat?

My DH is moving his sister from Cape Coral FL back home to the Jersey Shore. He will mostly be traveling along I-95.

Where can he stop along the way to get some of the best regional cuisine?

Road side stands to nice restaurants are welcome! Oh and make sure breakfast is included! :)
