I was wheelman for a fishing trip at beautiful Round Valley Park near Flemington, NJ over the holidays and made a pit stop at a spanking' new Super Walmart in the Raritan Valley Center off of Route 31 on the way home. I did my comparison shopping in the food section and was surprised to find a 16 oz bag of key limes for $2.50. There were about 15 of the cute green ping pong balls in the bag, origin Texas. They were firm, green and looked like you could squeeze a lot of juice out of them. My favorite no bake summer recipe for a tangy but not too sweet Key lime pie recipe: blend WELL 1 can sweetened condensed milk with one 8 oz package of cream cheese (** must be room temperature) slowly add 1/2 c or more fresh lime juice. Pour into cookie pie shell and chill. This recipe has never failed me. If you have the time for a homemade shell, add coconut and macadamia nuts to crushed vanilla wafers and a little 1/4 c. melted butter. This you do need an oven, about 12 min @350.
