Fassett Farm in Naugatuck/Beacon Falls, CT
Does anyone remember when this poultry farm sold fabulous prepared chicken & turkey dishes? They were decades ahead of their time selling rotisserie chickens and turkey breasts, but also sold frozen pans of chicken casserole, turkey tetrazzini, etc. that were staples on buffets until the late 70's or early 80's. I left the area then but I think (based on Google maps) there are condos on the property now. I have hunted the web looking for a copycat recipe of their chicken casserole (the version without pasta stretching it) to no avail. Any ideas or suggestions?
I've been looking for recipes from this farm too. I know there was an article in Yankee Magazine about it but don't know the year and The Evening Sentinel newspaper had the recipe for their "pink" macaroni salad too. I have been unable to find either one of these. The couple that owned the business retired. Sadly, no one wanted to keep it going.
I remember going there as a kid (late 70's, early 80's, I guess?) to pick up chicken in those paper/foil bags and I remember absolutely loving their cole slaw! I remember seeing the chickens outside, too.
