Tree Stone Bakery in Edmonton sold

As reported in the Journal on Dec. 30 Nancy Rubiliak has sold her excellent little artisan bakery on 99th Street.

While the sale of Edmonton's best artisan bakery would normally be a downer this sounds like it might be as good (with the potential of getting better) since the buyer is a serious baker who wants to maintain and improve on the lineup with the addition of croissants and a few pastry products.
Nancy will stay on to train the new owners Yvan and Ritsuko Chartrand and maintain the continuity of the product line during the transition.

If all goes well there may also be a wood fired oven to make Montreal style bagels in a year or so as Yvan has trained in oven construction and plans to build one.

Look forward to seeing how this evolves and thanks to Nancy for some great bread.

    The bread was delicious! If the quality stays the same and the new products are also at the same level, this will be a change for the better.

      I stopped in yesterday afternoon and the new owners are now on their own with Nancy having completed her transition duties.
      I bought a couple of mini baguettes and a white levain loaf and they were both excellent so things are off to a good start!
