Best BBQ in the desert is probably The Cowboy Way BBQ. Literally a hole in the wall place. But the owner is on the competitive BBQ circuit. Had some of the best beef ribs I've ever had there and their beans are the best I've ever had. Ordered the half order of beef ribs and they give you a full rack. Again it's a hole-in-wall place with counter seating.

re: monku
Re the Cowboy Way BBQ: they've moved to 2000 N. Palm Canyon in Palm Springs, so no longer just counter seating - they have a lot more room. Based on monku's suggestion, we tried it out doing takeout. The half rack of the beef ribs were HUGE (4 big meaty pieces). The chili was also really well spiced. The beans are sort of their beany version of their chili with ground meat instead of chunks. Also really good. Other sides like the mac & cheese, cole slaw, corn bread are fine, but really the beans, chili and ribs are outstanding.
