What to do with leftover champagne?

After the celebration, realized we have about a 1/2 bottle of champagne leftover. We are not champagne drinkers, but are very willing to use it in a recipe. Any suggestions?

Once I came across a book of sorbets in the library that included a recipe for Champagne sorbet. I wish I had copied the recipe!

HA HA...I say the same thing....left over champagne? Anyway, you can make it into a sorbet or granita and put it with berries....yum.

my first inclinations are poached shellfish, a vinaigrette, or sabayon...and i like the risotto idea.

We had leftover champagne too- I ended up adding sugar and vanilla and reducing it down to a syrup I plan on pouring on pancakes or ice cream...

Try substituting it for white wine in risotto. I have a recipe (somewhere!) for champagne-feta risotto... mmm...
