What to do with leftover champagne?

nosey Jan 1, 2010 02:00 PM

After the celebration, realized we have about a 1/2 bottle of champagne leftover. We are not champagne drinkers, but are very willing to use it in a recipe. Any suggestions?

Try substituting it for white wine in risotto. I have a recipe (somewhere!) for champagne-feta risotto... mmm...

We had leftover champagne too- I ended up adding sugar and vanilla and reducing it down to a syrup I plan on pouring on pancakes or ice cream...

my first inclinations are poached shellfish, a vinaigrette, or sabayon...and i like the risotto idea.

in case none of those appeal to you, i did a quick search and discovered a Food Network link with 100 ideas:

Thank you all for the great ideas! With over 100 recipes, I should be able to find something to do with it. Thanks, again!

HA HA...I say the same thing....left over champagne? Anyway, you can make it into a sorbet or granita and put it with berries....yum.

Once I came across a book of sorbets in the library that included a recipe for Champagne sorbet. I wish I had copied the recipe!

I recently used some as my liquid in this lovely recipe for roasted pears: http://smittenkitchen.com/2009/12/van...

Also works great to deglaze the chicken roasting pan!
