Butter-less Meyer Lemon Curd?

I'm making desert for a friend going through chemo who can't eat dairy or soy. I have some meyer lemons, but can't find a recipe that doesn't have some milk or tofu. Do any of you know of a substitute for the butter in a lemon curd recipe that works? Alternatively a substitute for the condensed milk in a key lime pie. Thanks.

  1. Alice Medrich has a lemon curd sans butter in her book "Chocolate and the Art of Low-fat Desserts". I'll see if I can find a couple of links for you.

    Here's one adaptation

Ah, here's a good link. It takes awhile to load (I don't know why

Good luck! I'm certain your friend will appreciate your thoughtful efforts.

    1. try sweetened, reduced coconut milk or sweetened coconut cream to replace the condensed milk in key lime pie.
