Looking for the Shrimp Scampi recipe served at the Villa Di Roma, Phildelphia, PA
I live in Philly also and I too love the food at VDR! Sadly, I don't have their shrimp scampi recipe, nor have I every had it (but I will "next time"). Here is my mom's shrimp scampi recipe just for the heck of it. Everyone I've ever made it for loves it.
Very simple: melt a mixture of half butter and half olive oil in a large saute pan (about two to three table spoons of each) Saute about four cloves of sliced garlic til lightly golden. Add 1.5-2 lbs of large cleaned, deveined tail-on shrimp and salt/pepper to taste. Stir and saute til done. Take off heat and add Progresso Italian style breadcrumbs--enough to soak up cooking liquid; probably 1/2 cup to one cup and stir in so that the shrimp is mixed in with the bread crumbs. Garnish with chopped parsley and lemon wedges. Note: I have tried substituting other bread crumbs, even "gourmet" flavored one from the fish market at Whole Foods--it just doesn't taste as good.
