How to Order in Chinatown - Roast Pork and BBQ Pork

In Chinatown what's the difference between BBQ pork and roast pork and how can I make sure I get the right dish? I'm going to Hong Kong Eatery tonight and would like to sample both kinds. The red boneless pork is already a favorite (I think that's what they call BBQ pork) but I want to try the other kind as well, the kind that I see that's crispy and golden brown as it's carried across the dining room. What is it called? It doesn't matter if it's bone-in ribs or boneless.

    Exactly as in the title of your post.
    Roast pork= crispy skin pork.
    BBQ pork= reddish colored pork (if they use red food coloring) which has been marinated.

      The red boneless pork is char siu. Call it char siu, and you'll be guaranteed to get that. If you want the crispy skin one, order siu yook.

        for the pork you describe with the crispy skin ask for 'Crispy Pig' and ask for a center cut.

          I'm not sure, but I've always been successful just by pointing at the meats I want!
