I don't think that putting balsalmic vinegar, reduced or not, on a pizza margherita is making the best use of those ingredients. Balsalmic on other pizzas, however, can be fantastic. The best pizza al taglio I've ever had was prosciutto, roasted tomato, parmesan, olive oil, and balsalmico tradizionale.

Try a reduction of cheap balsamic vinegar, and use a tiny bit of it drizzled on top after the pizza is coked. Try it. Dare you. Had this the first time at an Italian restuarant in Chicago's "Little Italy." It was beyond good. Reduce the vinegar by half, and then just a tiny, tiny drizzle.

No. The acidity of the vinegar overpowers the sweetness of the basil and the subtle flavor of the mozzarella. In Italy no one uses balsamic on mozzarella because all you would taste is the balsamic, not the mozzarella.
