Great Spinach Salad?

I'm not talking about flabby tasteless baby spinach from a plastic bag but a big bowl of properly cleaned and picked over grown up chewy, crunchy spinach, maybe with some chopped egg, bacon crumbles, finely chopped and seeded tomatoes with a nice light apple or balsamic vinegar dressing, maybe even warmed with some bacon fat mixed in. This used to be a staple around town. Now with advent of the insipid factory farmed cello baby spinach it's hard to find the grown up variety. Any suggestions fellow Chowhounds?

    JG Melon on the Upper East Side has a great spinach salda.
