Soft Caramel Corn Syrup Substitute

I'm looking for something to replace the corn syrup in my soft caramel recipe. I'm snowed in and can't get any corn syrup. Is the corn syrup necessary, and if so is there a replacement? I realize that the topic has been discussed, but there is no direct answer on the question.

    1. You can substitute simple syrup. I think corn syrup is supposed to be less likely to crystallize, but before it was invented, people just used sugar. You could also use honey, but that might affect the taste. There's also a recipe here for a substitute made with cream of tartar if you have it. http://tinyurl.com/576h22
