Soft Caramel Corn Syrup Substitute

Zviosif Dec 20, 2009 05:20 PM

I'm looking for something to replace the corn syrup in my soft caramel recipe. I'm snowed in and can't get any corn syrup. Is the corn syrup necessary, and if so is there a replacement? I realize that the topic has been discussed, but there is no direct answer on the question.

If you have maple syrup it can work.

You can substitute simple syrup. I think corn syrup is supposed to be less likely to crystallize, but before it was invented, people just used sugar. You could also use honey, but that might affect the taste. There's also a recipe here for a substitute made with cream of tartar if you have it. http://tinyurl.com/576h22
