How long will raw egg tiramisu keep?
I made David Lebovitz's tiramisu recipe 30 hours ago to give to some friends tonight. Unfortunately, I won't be able to hand it off for another 24. Is it unsafe to keep this long given that it contains raw eggs?
I wouldn't risk it. If it's been kept well chilled it might be okay, but I would feel terrible if I gave friends what was meant to be a delicious dessert and they got sick. I made a tiramisu recently too, where the eggs were supposed to be raw. I did the double-boiler routine with them regardless, and it didn't seem to affect the outcome.
