What to do with ground veal?

I mentioned to my wife that I might make a veal scaloppine and she brought home *ground* veal.


Does anyone have a great recipe for ground veal?

      Italian Bolognese or Meatballs


      blkery's suggestion looks like a winner......but I would add a veal patty parmigiana into the mix as well.....either as a sandwich or with pasta as a dinner.

      1. Veal tamales might offer a change of pace. Brown the veal, deglaze the pan with some red wine and reduce to thick syrupy texture, combine it with some salt and pepper, paprika, rosemary. Cool and use to stuff tamales.

        2. Real, old-fashioned Swedish meatballs: equal parts veal, pork, and beef.

          1. When I hear "ground veal" I definitely think bolognese for sure. Those tamales sound really neat, though...
