Not many markets carry a capon (castrated rooster). Did you call Winn's and Whole Foods? I know that it is traditional for Coq au Vin, but I have always just used a roasting chicken.

Have you prepared capon before? I have not, but am interested if you have a special recipe in mind or if it is a certain ethnic tradition. If you want a really fresh killed capon, I'm sure you can order one online in time for the holidays. The Always Curious, LMF

If you can not find a fresh one, Publix caries frozen capons.

Possibly Fresh Market if not Wynn's or Whole Foods as LMF offers.
