what about EOS? It's mediterreanean in Stamford, lots of vegan stuff, I think. Don't know about Christmas though.

I know Traveler's Rest is open on Christmas and they have vegetarian selections. They are bit pricey, depending on your budget, but their food is always superb, so it's worth it!

Here's the Xmas menu:

Really expensive.
I'm trying to come up with a good solution for you.
Are you all strictly vegan?

If Indian is ok, this place is near you. I don't know about the food, though:

I don't know about the hours, but this place has a broad menu which might suit:

And finally, to add to my "I don't know but I'm just trying to help" theme of responses, this sounds interesting:

I (wait for it) don't know if they are open on Xmas. I have, however, eaten at the chef's previous restaurant, Oporto, in Hartsdale, and thought he did a great vegetable paella. (I'm veg, but not vegan.)
Happy holidays and let me know where you wind up.
