Paramount Bakery (now with more than 1 location I'm told) probably is the best I've ever seen

They're made right in front of you, fresh

Avoid their hot foods though, their shawarma sucks and I haven't had anything else "cooked" good there.

Their baklava's are great too though

Paramount's pita is very good, but the baklava is pretty heavy...There is a location on Yonge, a couple of blocks north of Steeles

For shawarma or falafel (or general stuffing) I like the pitas from Arz bakery on Lawrence Ave E. They are cheap and are usually still warm when I pick them up. Excellent baklava as well.

Pita-Pita Bakery does a more bready version that are great for dipping, they freeze very well if you buy in bulk. I think they supply to Me Va Me.

If you're closer to the north end of the city - Sababa has great pita. The store attached to the restaurant.

Royal Beef on the Danforth, near Coxwell has excellent pita bread. Not sure where they get them from but living in the heart of greek town we've tried many and I can honestly say, these are the best.

Mr. Pita at Dundas and Runnymede has great food! You can get a falafal on a pita with two sides for about eight dollars. The owner also keeps the place spotless which makes it more inviting!
