Lemon ginger tea recipes

I have a date tomorrow, and she really likes the lemon ginger tea at the local coffee shop. I was thinking of trying to make it. Anyone have any recipes? Thanks!

I press the ginger with a garlic press to get the juice out, then mix a bit of that with honey and lemon juice in the bottom of a mug before pouring hot water into the mug and stirring.

Well, regular ginger tea is very very easy to prepare. Thinly slice and "bruise" fresh ginger, I usually don't even bother to peel it first...(if it's very fresh, the skin is very thin) and bring to a boil, turn heat down to a simmer for 2 or 3 minutes, turn off heat and allow to steep. Then, strain it into a cup and add your fresh lemon juice. I would do a trial run to see if it tastes anything like what they serve in the coffee shop.

I do something very similar- only I add the ginger and pieces of lemon rind to boiling water. Then I add honey and lemon juice when Im ready to drink it.

fmc, great tip about also using the zest or rind...will try that...love adding the lemon zest to my hummus lately too along with fresh lemon juice!
The last few times I made ginger tea, I ended up eating the ginger too--it was really nice.
