I take the juices in the pan, add celery, onion, carrot, garlic, cook it down in the fat add stock and reduce. Then I strain. I can't find a strainer, no time to buy one. What do you suggest. I also have no cheese cloth.

Any thin piece of clean cloth that you can pour a liquid through should do.
Alternatively, remove any peppercorns/bay leaves (if you're using them), and blend it in the blender to a smooth consistency.
Use your colander or a slotted spoon.
