Need a Recommendation- Wine for Jambalaya

I need some recommendations for wines to pair with Jambalaya. My friend said it will be medium spicy.
I look forward to your responses and suggestions.
With the exception of pasta and a red sauce such as marinara or arrabiata, I always prefer white wine with spicy food. More specifically, I like an acidic white, which tends to cut through a spicy entree such as jambalaya. My advice would be to lay your hands on a good bottle of pinot grigio and make sure it is well chilled when you serve it.
