Good basic breakfast in Spokane?

We'll be visiting family over the holiday and will probably go out to breakfast a couple times while we're there. We've done breakfast at Molly's, Frankie Doodles, Wall Street Diner, and Perkins in the past. Mostly just looking for a place that can cook eggs right, has good bacon and sausage, biscuits and gravy and maybe eggs benedict. Any hidden gems out there? Would prefer not to have to venture too far out of the central Spokane area. TIA.
