I wonder why they didn't just use cake flour for AP flour and cornstarch? Did they address that?

Try this no knead one from Artisan bread. You mix up the dough, put it in the refrigerator. The night before, assemble and refrigerate. The mornng of, take it out and let it come to room temp (I do it before I shower and that's about the right amount of time), and bake:

The night before: Prep the dough, filling, rolling and cutting, place in baking pan(s), cover with plastic wrap and refrigerate. The buns will rise slowly. Take them out of the fridge 30 minutes or so before baking (go shower or something), and bake in a preheated oven.
