Looking for Bay Scallop Appetizer recipe

I have a 3 lb. bag of small bay scallops. I would like to make an appetizer that is easy and yummy (no bacon wrapping please). Any ideas?

    since kumquats are in season:

you could also do this one in ramekins for individual appetizer portions:

I have a friend who owns a a seafood restaurant who makes three variations of scallop appetizers...chopped with either or all three of the following seafoods:

      Lump Crabmeat
      Shrimp
      Fresh Clams

He combines the items together with a cream mixture, think of something along the lines of Newburg or Imperial recipes, and then stuffs them together into clam shells or casserole dishes for baking in the oven and top browned under the broiler. They are some of his most popular appetizers.
