Main dish needed for Christmas dinner?

Need some inspiration for something to make this year- a meat of course. Any favorite, special recipes you would like to share. I like the idea of prep earlier in the day and not having to do too much work when the guests are here.

      My family's traditional main is rellenong manok, a whole, deboned chicken, re-stuffed with pork, chorizo, eggs and raisins. The deboning and marinating should be done the night prior so that all you have to do is occassionally baste the beast as it bakes away in the oven, filling your kitchen with the savory smells of roasting chicken and cooking pork.

        Leg of lamb. Score the fat side about 1/2 inch deep, rub with favorite herbs/spices (I like to use olive oil mixed with cumin, coriander, freshly chopped garlic, freshly chopped rosemary and a few rosemary sprigs, finely chopped onion, freshly squeezed lemon juice) S&P to taste (be sure to balance out the salt if the stock is salted) and roast it, fat side up, (covered) on a rack in a pan with chicken stock and white wine.
        Don't let the liquids (stock/wine) run dry. Reconstitute with water if needed. The gravy is out of this world.
