Vodka soaked Cranberries
Every year I make a big batch of what we call Red Drink for the holiday season..cranberries cooked with some water sugar and then when cooled lots of vodka addedd. After sitting the liquids are drained off and served with some soda water....very tasty and potent.
Every year I end up with lots of left-over vodka soaked cranberries. Some gets used as is during the Christmas dinner but every year I think I should be able to do something more.
Any suggestions???
I put them in the drinks as a decoration, but now that you mention it, I do throw most of them away. They'd probably be good in stuffing or some kind of baked dish, or cake. I've only done this once or twice so didn't think about the waste yet. PS I made mine this year with cranberries, a cinnamon stick and some lime peel, just to make it more festive. Came out nice.

Add them to champagne for a pretty cranberry mimosa.
Top angel food cake or a cheesecake.
Make a trifle.
light them on fire on crepes or whatever base.
Cook up w/ pork chops or other meats.

Isn't cranberry in champagne called a pointsettia?
You can put the cranberries at the bottom of the dish and then do creme brulee (vanilla) as usual. I do this with regular whole cranberries cooked down (though now you've mentioned the vodka I will definitely have to try this). It looks really pretty when people "break" into it too.

They would be good in muffins or coffee cake with perhaps some grated orange zest.

i have worked in many restaurants where we make infused vodkas and other liquors. the fruits used become very unpalatable after just a few days. plenty of drunk patrons over the years have insisted on consuming some of the fruit, even after i warn them. the look on their face from the horrible taste is amusing, to say the least. toss the fruit.

The berries look pretty when wet, but when dry they look pale and disgusting. Using them as a garnish in a punch bowl would be nice, but that's about all I can think of.
