Wheat berries, now what?

I saw a few interesting recipes which used wheat berries(got a great new cookbook, Raising the Salad Bar), so I went to buy wheat berries. Not knowing whether to buy "soft" or "hard", I bought the hard. Mistake!!
I understand that I can soak the berries in water overnight, but then, if I want to use them in a salad,how do I dry them?
Any assistance would be greatly appreciated.
