Great butcher in DC?

Occasionally I want to buy some off-the-beaten track proteins (for all manner of classic recipes) and would prefer to do so in person rather than online. This is stuff that Wegman's and Whole Foods can't always provide. Do you have a go-to butcher in the city? Or in No.Va. close to I-66?

    What exactly are you looking for? Rabbit? Goose? Boar? Emu?

    I like Union Meats at Eastern Market for the more basic stuff.

      Goose, certain cuts of pig the supermarkets can't accommodate, unusual sausages. And a better selection of duck products than I can get at, say, Wegman's.

        You can ask the butcher at Wegmans to order whatever you need. They will typically accommodate. Wagshals may be another option if you are in DC.

      If you're willing to go a few miles south of 66, this guy is great and it is an old fashioned, independent butcher shop:
