La Quercia Guanciale at Hillcrest Whole Foods (San Diego)

Just found out that this very hard-to-get Italian pork jowl bacon is now available here, along with La Quercia's prosciutto made from pastured pigs. This is what you need if you want to make bona-fide spaghetti all'amatriciana, and I guess some folks like to use it for carbonara. Apparently it's new to the store, and they got it for the holidays, but unless there's sufficient customer demand its appearance here may be short lived. Please go and buy some so I can continue to get it (and also because it rocks). Cheers.

Hey Josh, did you notice if they carried some 'imported' nicely veined gorgonzolla? I usually use panchetta for carbonara, more commonly available, after trying the jowl you'll never go back to bacon.
