bit of a let down after reading the postings here. My DH took me there for my birthday tonite.
I had the halibut and it was dried out. The rice and accompaniments were nice but couldn't cover for the dried out fish. My husband had the pork loin and found it somewhat tasteless, although his accompaniments were above average too. We shared a first of Warm Flatbread with Sheep’s Milk Ricotta which we both enjoyed. Dessert was a panna cotta for him and a selection of three cheeses for me. These were excellent and partnered well with our wine--a Riesling that was quite nice. the whole was topped off with two expressos which were decent but on the whole not a memorable experience based solely on the food.

  1. I agree that the appetizers are better than the mains, but I had an excellent time overall at Proof. I started with the Wagyu Beef Carpaccio - excellent. For a main, I had the Crispy Duck & Pork Confit with Grilled House Made Lamb Sausage cassoulet. It was good, but a little fatty (unnecessarily so). The cheese plate was very good.

    1. Had a great night at Proof this past weekend. All four of us got appetizers and 3 of the 4 were excellent (other one was salad greens, nothing spectacular). Wagyu beef carpaccio with sriracha-hoisin dressing, Ahi tuna tartare w/avocado and a soy emulsion, and a roasted octopus special that was knocked out of the park.

      For mains, I had the Crispy Duck & Pork Confit with Grilled House Made Lamb Sausage cassoulet. I found mine really tasty and not overly fatty. The lamb sausage was incredibly good and the star of the dish.

      Other entrees in our group were the Hangar Steak and the Pekin Duck breast. Both were good, duck was excellent. Desserts were fine, but probably unecessary after so much food.

      Was extremely dark in the restaurant so for those who have trouble reading menus in low-light, bring your glasses or ask the waiter (he'll supply a magnifier w/light on it). One of our group ordered Espresso after the meal and while he loved it, it was beyond tiny. I know espressos are meant to be "shot-glass" sized, this was barely a swallow and he had to follow it up with a coffee.

      Overall, we had a great experience and will definitely be back. Highly recommended!

        For appetizers, the gnocchi with wild mushrooms is divine.
