Bacon grease storage

Is there anyone who truly knows how long strained bacon grease can last in the frig safely?

    1. i freeze it. it lasts forever that way.

          What do you freeze it in? Ice cube trays?

              nope, i let it cool and pour it into a ziploc bag. it doesn't freeze solid, so it's easy to just break off a piece when i want it. i do the same with duck and goose fat.

                1. Ditto; I keep mine in the fridg in a jar or a bowl covered...my mom used to keep hers out in a grease can on the counter when I was little...

                          I don't strain it - those little brown bits have the most flavor. I keep adding to and scooping from the same 8oz jar that lives in the fridge. I scoop down to the bottom, which keeps the contents "rotating".

                          • I keep it refrigerated for several months.. I take it out and use it for Axle Grease on the Chuck Wagon,,,, and then just start over.....

                              1. I keep mine in a small jar on the counter. I remember reading somewhere that it was totally ok to keep it out vs in the fridge. I don't usually have just a whole lot and it gets used fairly quickly. I'm much more apt to use a spoonful here and spoonful there if I keep it in plain sight!

                                  1. I keep it in the fridge in a jelly jar with a lid until I use it. Sometimes a couple of months. It never has gone bad.
