Old potato starch

I found an opened can of potato starch lurking in the back of my pantry. I'm guessing it is close to three years old. It looks fine and doesn't have any odor. Is it still good? I'm hankering for potato kugel!

    Unless it's clumped together in the container, I'm sure it's fine. The stuff is pretty inert.

      it's dessicated, so it should be fine, i guess. i've only ever had kugel made with actual potatoes though.

        I do use actual potatoes. The potato starch, when added to liquid ingredients, contributes to a creamy texture on the inside, while the outside of the kugel gets crispy when it bakes.

          ah, you use it as a thickener. i'm sure it's fine a long as it doesn't smell musty.
