This is on my list of places to go, but given that it's the only Relais & Chateaux in Texas, I would think the Inn at Dos Brisas in Washington, TX has some 'fine dining' to offer.

It used to be Le Reve in San Antonio, but they have since closed. My new personal favorite is Tony's in Houston.

Stephen Pyles hands down (I haven't tried Samar yet). Fearings needs less hand shaking photo opps and more time in the kitchen (did like the space though)
