What is the cookbook for Indian cuisine?

My DH is in love with Indian food. I'd like to get him a cookbook for Christmas he can use to start making his own stuff at home instead of searching for the best Indian in the state. He is an excellent cook so hit me with your best ideas! Thanks!

Madhur Jaffrey's Indian Cooking is a great book for getting started (and beyond). We just did a COTM thread on that book and Julie Sahni's Classic Indian Cooking.
