recs for other cities of Taiwan, please
It's great fun browsing and reading up all the recs. for Taipei, and the surroundings.
There seems, however, to be no recs. for cities like Hualien, Taitung, Kenting, Kiaoshung, Tainan, Taichung ,etc.
I would greatly appreciate your help/suggestions for those cities.

From Taipei, if you head eastward to Yi Lan and Jiaosi which is roughly 2+ hour drive (freeway + numerous tunnels), there are tons of warm springs resorts.
Yilan's most famous night market is Luo Dong 羅東夜市, although last time we unfortunately could not make it there. You can find some blogger type recs referenced here

It's a locals kind of place, with free but limited parking in the lot. They specialize in local seafood dishes and really delicious local veg (grown in warm springs water) so they have a unique flavor you can't have anywhere else.

For Tainan, all I know is that you probably want to make a trip to Tu Hsiao Yeh peddler noodle (main store). Website www.iddi.com.tw, although they have branches in Taipei.
You also want to try boneless milkfish dishes (Shir Mo Yu), as there are restaurants that specialize in that fish.
Hualien....unfortunately we only ate pizza hut (as we had kids in our traveling party) for dinner and brought it back with us to the bed and breakfast place, but the marinated snack eats (lu wei, chicken feet) we had that a friend got for us at some night market.
If you are going to be driving, one of the local must visit places is the Chi Sing Tan (seven star) Katsuo museum. Website: http://www.katsuo.com.tw/. It is a museum dedicated to the nearby local business of bonito/katsuo fishing, as well as the process of fermenting/drying the fish, then smoking it and treating it then shaving it to get the flakes for cooking. The food court in the lobby isn't exciting as you get the typical eats and bites (as well as takoyaki with the bonito flakes on top) but the GIFT SHOP is something you want to visit to sample the wares made with it. They also sell various sorts of fish flakes you may not be able to easily find (or at all) in Taipei, so pick up a few bags.
To my knowledge, Taichung's most well known night market is 逢甲夜市. Also the birthtown of tapioca milk tea. Chuan Shui Tang http://www.icetea.com.tw/ is also headquartered in Taichung.
